I was born and raised in Denver where my parents were avid gardeners. Now retired, I thought I would follow in their footsteps and plant my own vegetable garden. The problem was I had nowhere to plant because I live in a townhouse community. This year I was presented with the opportunity to rent a raised garden bed at the Foxridge Community Garden.  After hauling dirt to the newly-built raised garden beds, the fun began.

It has been quite the learning experience, I’ve made new friends, and now I’m starting to reap its bounty.  Not only have I been devouring zucchini, yellow squash, cucumbers and radishes, but I have been able to utilize some of the vegetables in lasagnas I make for Lasagna Love. Started at the beginning of the pandemic, Lasagna Love is a nationwide, grassroots movement that aims to positively impact communities by connecting neighbors with neighbors through homemade meal delivery. Its mission is not only to help address the incredible rise in food insecurity among families but also to provide a simple act of love and kindness. Each lasagna I make and deliver contains veggies hidden in the meat sauce to increase its nutritional value. I’m so grateful to be a part of both the Foxridge Community Garden and Lasagna Love.
